What is the best way to sharpen my knives?

knives
Jimmy B. asked:

I bought a few Henckels Pro-S knives a year ago and I think they are starting to lose their edge. Are there stores that will do this or should I buy some tools, like a whetstone, and do it myself? I am a little hesitant to do it myself, because I fear I will ruin them and have to buy new ones.

take them to a knife shop in your local mall, they have professional sharpening machines and they know what they’re doing. doesn’t cost much, either.

If you are hesitant about doing it yourself, take them to a place that sharpens things like that.

Quick and easy would be to take them to a knife sharpening place.

I use a LANSKY knife sharpening system for my knives and keep them sharp enough to shave the hair off my arm. It takes a bit of practice though.

first buy yourself a diamond stone, then take a knife you don,t use or like and practice holding the edge at a slight angle(this is very important)and maintain this angle and grind the blade with medium pressure in a circular motion working back and forth along the edge of the blade. you should soon improve the cutting edge. also ifyou want a keener edge buy a stone with a finer grit then work the same way with it. some stones must be lubricated with oil. and others watter. this is not a bad joke but saliva works better than watter on watter stones. you must be very careful to avoid cutting yourself,as itis easy to do so while sharpening a knife. always keep the cutting edge away from you and DO NOT place your fingers to where the knife edge will cut them if you slide the knife edge over the end of your stone . good luck and you can do it.it just takes a little practice

Take them to a professional knife sharpener. They are way too expensive to ruin. Have them show you how to do it the right way.

I was suprised, as I toured the Wurthers Knife Factory in Ohio…

Lady brought in her knives to be sharpened, and he asked if she was right or left handed..(Now, “this” impressed me to no end, when a Professional asks THAT!)….

Then, I watched him take the knives back into the shop and he put them on his BELT SANDER!! I LAUGHED to no end!!! LOL!!!

I could of done something like that! And to think those knives are really expensive because they are all hand made.

    I wish you well..

If you`re afraid to do it, then don`t. You won`t ruin the edge by trying, they can always be re sharpened. Try this. Ask your local butcher to put an edge on them. If you`re a regular customer, more times than not they are more than happy to do this for a customer. And believe me they know what they`re doing.
